Peanut butter is my all time favorite desert ingredient.  I don’t care what is on the desert menu, if there is an option with peanut butter…that is what I am having.  And these Peanut Butter Energy Bites are like a little desert but in snack format.  

 

If you have allergies that you are working around there are so many alternatives to peanut butter.  My son had a peanut allergy that he has thankfully outgrown.  When he was younger we used this Sun Butter (made from sunflower seeds.)  While you could taste the difference if you were to just eat a big ‘ole spoon of it, when it was mixed into something, you could hardly tell the difference.  He also has a soy allergy, and while he can tolerate it in small amounts, we use these soy free chocolate chips when we are being super strict with his diet.

 

My whole family loves Peanut Butter Energy Bites.  I almost always have a batch made and sitting in my pantry.  I love to grab a couple before a workout first thing in the morning.  The kids will take them for a snack after soccer or hockey practice.  If we are traveling for a tournament, we pack them for the kids to have as a snack between games, when the need something substantial to keep them going but not super full so that they are dragging on the ice or field.  And my favorite….when I get a hankering for something sweet, I will reach for an energy bite instead of raiding the pantry looking for Oreos.

 

Peanut Butter Energy Bites are super easy to make, store and travel well and are made completely of pantry ingredients.  You can whip up a batch in 10 minutes.  If you have littles, they will love to help you make these.  These will keep fresh in a air tight container for 7-10 days, if they last that long in your house!  These are my favorite storage containers for my energy bites.  The glass is dishwasher safe, I prefer to hand wash the lids.  The middle ring seal easily pops out for easy and thorough washing.  They also create a super tight seal, so I know my food is stored safely.

 

Now for our ingredients:  3/4 c. unsweetened coconut, 1 c. instant rolled oats, 1 T. chia seeds (optional), 1/4 c. mini chocolate chips, 3/4 c. peanut butter (or alternative nut butter), 1/4 c. honey.  Easy peasy, you probably have all that in your pantry right now.

You will need a large mixing bowl.  wooden spoon, small spatula, measuring cups and spoons, and a small cookie scoop.  My small cookie scoop is one of the most used utensils in my kitchen.  I have the Wilton Stainless Steel Cookie Scoop that gets used (and misplaced) all the time.

 

Place the dry ingredients (coconut, oats, chia seeds and chocolate chips) in the bottom of the bowl.  Pour in the peanut butter and honey.  This is where you are going to need the small spatula to scrape every last bit of peanut butter and honey out of your measuring cup.  Use a wooden spoon or larger spatula to mix all the ingredients together.

 

If you mixture seems a little dry, add more honey a little at a time.  You want the mixture wet enough to stick together without falling apart but also not so wet that it won’t hold it’s shape.

 

Your mixture should look like this.  If your oats look dry, you know you need to add some honey.

Next you are ready to roll your energy bites.  This is where the small cookie scoop really comes in handy.  Fill the scoop and flatten the top, I scrape it along the side of my bowl.  Pop the mixture out of the scoop, give it a quick roll and place it on your storage container.  Repeat until you have used all the mixture.  I usually get 26 energy bites out of 1 batch.

These will store easily in your pantry for 7-10 days.  Honestly, they never last that long in my house.  Just make sure you have them in an airtight container.
