Everything Bagel Chicken Tenders
Do you ever walk through the grocery store and find an interesting ingredient, have no idea how you will use it, but it ends up in your cart anyway? I stumbled upon Everything Bagel Seasoning over the summer and it has been sitting in my spice rack ever since. My sister mentioned she had a recipe for Everything Bagel Chicken Nuggets and thought that was a brilliant use for this seasoning. So I developed my clean version of Everything Bagel Chicken Tenders.
If you can’t find Everything Bagel Seasoning, you can make your own at home with a combination of 1 T. sesame seeds, 1 t. dried onion, 1 t. dried garlic, 1 T. poppy seeds and 1 t. salt. It will only take a few minutes to mix together this seasoning and then you will have the perfect amount for this recipe.
Let’s talk chicken. My family prefers boneless, skinless chicken breast. So I buy the family pack when I do my grocery shopping and break it down when I get home. Buying big packages of meat is a little more work, but worth the effort for the money we save. If you buy family size packs of meat a FoodSaver is a must! This basic FoodSaver is well worth the small investment. I use it for so many different things in my kitchen. It is great for breaking down large packages of meat and freezing smaller portions for later use. I use it to vacuum seal cheese, reseal cereal bags, and to freeze fresh vegetables. These are the refill bags I use. They are good quality and last me forever, I last had to purchase refills almost 2 years ago. (And I use my FoodSaver ALL the time!)
When breaking down my chicken breast, I take the extra time to trim and prepare the chicken for my upcoming meal plans. I will cut it into chunks for tacos, thin slices for stir fry, long strips for homemade chicken tenders and slice thinly for cutlets. This makes cooking during the week a breeze! I love these multi colored plastic cutting boards. They keep me from cross contaminating ingredients, are easy to wash and take up minimal storage space.
Let’s start making dinner! The ingredients for Everything Bagel Chicken Tenders: 1 1/4 pound chicken tenders (or chicken breast cut into strips), 3/4 c. panko breadcrumbs, 3 T. everything bagel seasoning, 1/3 c. oat milk, salt and pepper. For the Honey Mustard Dipping Sauce you will need 1/4 c. Dijon mustard (or mustard of choice), 2 T. honey and 1 t. olive oil mayonnaise.
To start, preheat your oven to 375 degrees. If you have chicken breast, slice them into thin strips. In a shallow bowl, mix together the panko, everything bagel seasoning, salt and pepper to taste. Pour oat milk into a separate shallow bowl.
Line a baking sheet with parchment paper. Dip chicken tenders one at a time in oat milk, then roll into breading mixture. Place on prepared baking sheet, with about an inch between each tender. My favorite Nordic Ware baking sheets are the perfect size to hold a large batch of chicken tenders.
Place in pre-heated oven and bake for 20 minutes or until fully cooked (when internal temperature reaches 165 degrees.)
While the chicken is cooking, mix together Dijon mustard, honey and mayonnaise in a small bowl. You may need to add a little more honey to get the dip to your liking.
This was a mid-week meal for us, so I reached for some easy side dishes….sweet potato fries and roasted broccoli. I lined another baking sheet with parchment and placed the fries and broccoli together on the baking sheet. The fries were already seasoned and I simply seasoned the broccoli with a drizzle of EVOO and a sprinkle of salt and pepper. Pop it in the over with the chicken tenders. Everything will be done around the same time. If you have a little extra time, check out my recipe for Italian Style Pasta Salad, it makes a great side dish for the Everything Bagel Chicken Tenders.
This is such an easy weeknight dinner that the while family will love! My crew even dipped the fries and broccoli in the honey mustard dipping sauce.
I hope you enjoy this easy weeknight meal as much as we do!
